MEXICAN WEDDING COOKIES


(It makes 3 dozen)

3/4 cup unsalted butter (soft)
2 teaspoons vanilla
2 cups sifted flour
1 cup finely chopped nuts
1/2 cup powdered sugar
1 teaspoon cold water
1/4 teaspoon salt
Extra powder sugar for rolling

Preheat oven to 400 F. Cream butter until fluffy, add powdered sugar, vanilla, cold water and mix thoroughly. Beat in flour, salt, and nuts. Roll into small balls and place on ungreased cookie sheet. Bake in preheated oven for 6-8 minutes our until lightly browned. Remove from cookie sheet and roll in powder sugar while still hot.
